Ingredients

Scale
  • 8 oz (225g) semi-sweet or dark chocolate, finely chopped
  • 1/2 cup heavy cream
  • 1 tablespoon unsalted butter
  • 2 teaspoons instant coffee or espresso powder
  • 1 teaspoon vanilla extract
  • Pinch of salt

For Coating:

  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup powdered sugar
  • Melted chocolate or candy coating (optional)
  • Finely chopped nuts (optional)

Instructions

  1. In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Do not boil.
  2. Remove from heat and stir in the instant coffee or espresso powder until dissolved.
  3. Place the chopped chocolate in a heatproof bowl and pour the hot coffee-infused cream over it. Let sit for 2 minutes, then stir until the chocolate is fully melted and smooth.
  4. Add butter, vanilla extract, and a pinch of salt. Stir until the mixture is silky and uniform.
  5. Cover the bowl and refrigerate for 1–2 hours, or until firm enough to scoop.
  6. Use a teaspoon or small scoop to form balls. Roll between your palms until smooth.
  7. Coat each truffle in cocoa powder, powdered sugar, or melted chocolate. Chill for 15–20 minutes before serving.

  • Use high-quality chocolate for the smoothest, richest flavor.
  • Do not overheat the cream — it should be hot but not boiling.
  • If the ganache is too soft to roll, chill it a bit longer.
