Ingredients

  • 17.5 oz sugar cookie mix (1 package)
  • 1/2 cup salted butter, melted
  • 1 large egg
  • 3 tbsp all-purpose flour
  • 1/2 cup quick oats
  • 1/4 tsp ground cinnamon
  • 12 oz cranberries (fresh or frozen)
  • 2/3 cup granulated sugar
  • 1 1/2 tbsp cornstarch
  • 1/4 tsp ground cinnamon (for filling)
  • 2 tbsp cranberry juice (or lemon/apple juice)

Instructions

  1. Preheat the oven to 350°F (175°C). Spray a 9×13-inch baking dish with nonstick spray and line with parchment paper.
  2. In a large bowl, combine sugar cookie mix, melted butter, egg, flour, oats, and cinnamon. Beat until well mixed.
  3. Press 3/4 of the mixture into the bottom of the prepared pan to form the crust.
  4. In another bowl, combine cranberries, sugar, cornstarch, cinnamon, and juice. Stir to coat evenly.
  5. Spread cranberry mixture over the crust layer in the baking dish.
  6. Sprinkle remaining crumble mix evenly over the cranberry layer.
  7. Bake for 35–40 minutes until the topping is golden and the filling is bubbling.
  8. Let cool for at least 10 minutes before slicing. Cool completely for cleaner cuts.

Notes

  • Use fresh cranberries that have been frozen for 30 minutes to avoid bursting during baking.
  • White chocolate chips or chopped nuts can be added to the topping for extra flavor.
  • To make gluten-free, use a GF sugar cookie mix and certified GF oats.
  • For easier cutting, chill bars before slicing and wipe the knife clean between cuts.
  • Bars can be frozen for up to 3 months, individually wrapped and stored in an airtight container.
