Ingredients

  • 6 sheets frozen filo pastry, thawed
  • 50g butter, melted
  • 250g brie, cut into long slices
  • 275g cranberry sauce
  • 1/4 cup flaked almonds
  • 1 tablespoon black sesame seeds (optional)
  • Fresh rosemary sprigs or chives for garnish (optional)

Instructions

  1. Preheat oven to 180°C / 350°F. Line two baking trays with parchment paper.
  2. Place thawed filo sheets on a flat surface. Cut each sheet lengthwise into 3 strips, then cut each strip in half to make 36 squares. Cover unused sheets with a damp towel.
  3. Brush each square with melted butter. Place a slice of brie, a teaspoon of cranberry sauce, and a few almond flakes at one end of the square.
  4. Roll up the pastry carefully and pinch both ends to form a cracker shape. Repeat with remaining ingredients.
  5. Transfer crackers to baking trays. Brush tops with remaining butter and sprinkle with sesame seeds if using.
  6. Bake for 15–20 minutes, or until golden and crisp.
  7. Garnish with rosemary sprigs or tie ends with chives before serving.

Notes

  • Keep filo sheets covered with a damp towel to prevent drying out.
  • Use two layers of filo if your sheets are too thin or prone to tearing.
  • To freeze: assemble unbaked crackers, freeze on a tray, then transfer to a bag and bake from frozen.
  • Avoid microwaving to reheat—use an oven to maintain crispness.
