Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a large bowl, whisk together pumpkin puree, both sugars, eggs, oil, and vanilla until smooth.
  3. In a separate bowl, combine flour, baking soda, baking powder, salt, and spices.
  4. Gradually stir the dry ingredients into the wet mixture until just combined. Do not overmix.
  5. Toss the cranberries in a little flour, then fold them and the chopped pecans gently into the batter.
  6. Pour the batter into the prepared pan and smooth the top. Optionally, sprinkle extra pecans or sugar on top.
  7. Bake for 55–65 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the bread cool in the pan for 10–15 minutes before transferring to a wire rack to cool completely.
