- 2 lbs fresh spinach, washed and tough stems removed
- 2 tablespoons unsalted butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 1 cup heavy cream
- 1/2 cup whole milk
- 1/2 cup grated Parmesan cheese
- Nutmeg, a pinch
- Salt and pepper to taste
Instructions
- Blanch the spinach in boiling water for 2 minutes, then immediately transfer to a bowl of ice water to stop the cooking process. Drain well and squeeze out excess water. Chop roughly and set aside.
- In a large skillet, melt butter over medium heat. Add onion and garlic, and sauté until soft and translucent, about 5 minutes.
- Stir in flour and cook for 2 minutes to remove the raw flour taste. Gradually whisk in heavy cream and milk, and cook until the mixture thickens, about 5 minutes.
- Add the chopped spinach to the skillet. Stir in Parmesan cheese until melted and season with nutmeg, salt, and pepper. Cook for another 2-3 minutes, or until heated through and well combined.
