Instructions

  1. Melt the butter in a large pot over medium heat.
  2. Add the diced onion and celery, cooking for about 4–5 minutes until softened.
  3. Stir in the minced garlic and cook for another 30 seconds until fragrant.
  4. Add the tomato paste and Cajun seasoning, stirring well to coat the vegetables.
  5. Pour in the seafood stock and mix thoroughly, then bring the soup to a gentle simmer.
  6. Allow the soup to cook for about 10 minutes so the flavors combine.
  7. Use an immersion blender to blend the soup until smooth and creamy.
  8. Return the soup to low heat and stir in the heavy cream.
  9. Add the chopped lobster meat and cook for 3–5 minutes until heated through.
  10. Finish with lemon juice, paprika, and black pepper, adjusting salt to taste.
