Dive into the creaminess of our Velvety Cauliflower Puree! Perfect for a low-carb side dish that doesn’t skimp on flavor.

  • Total Time: 22 minutes

Ingredients

Scale
  • 1 large head of cauliflower, cut into florets
  • 2 tablespoons cream cheese, softened
  • 1/4 cup grated Parmesan
  • 1/2 teaspoon minced garlic
  • 1/8 teaspoon straight chicken broth powder (optional)
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon unsalted butter
  • Chives for garnish

Instructions

Fill a large pot with about 1 inch of water and bring to a boil. Add the cauliflower florets and steam covered for about 10-12 minutes, or until very tender. Drain well.

In a bowl or food processor, combine the steamed cauliflower, cream cheese, Parmesan, garlic, chicken broth powder (if using), salt, and pepper.

Blend or mash until smooth and creamy. Adjust seasoning to taste.

Transfer to a serving dish, top with butter, and garnish with chives.

Notes

  1. Choosing the Right Cauliflower: For the creamiest mash, pick a fresh, firm head of cauliflower. The fresher it is, the better the flavor and texture.
  2. Cut Uniformly: Cutting the cauliflower into even-sized florets ensures they steam evenly, preventing some from becoming too mushy while others are still firm.
  3. Drain Well: After steaming, draining the cauliflower properly is crucial to avoid a watery mash. Let it sit in a colander, and then gently press out any excess moisture with a towel.
  4. Blending Techniques: For the smoothest texture, a food processor works best. However, if you prefer a chunkier consistency, mashing by hand with a potato masher is a great option.
  5. Flavor Boosters: Don’t be shy with the seasonings. Cauliflower can handle a good amount of flavor, so apart from salt and pepper, consider adding roasted garlic, nutmeg, or even a splash of truffle oil for a luxurious twist.
  6. Make It Rich: For an extra rich and creamy texture, adding a bit of cream cheese, sour cream, or butter can make all the difference. Vegan options like coconut cream also work wonderfully.
  7. Herbs and Toppings: Fresh herbs like chives, parsley, or thyme add a beautiful pop of color and freshness to the dish. A sprinkle of grated cheese or crispy bacon bits (or vegan alternatives) can add a delightful crunch and flavor contrast.
  8. Reheating: If you need to reheat the mash, doing so gently on the stove with a splash of milk will help retain its creamy texture. Avoid the microwave, which can make it grainy.
