Ingredients

Scale
  • 4 cups sweet corn kernels (fresh or frozen)
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 3 cups vegetable broth
  • 1 cup cream or coconut milk
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 1 tablespoon lime juice
  • 2 tablespoons chopped fresh cilantro (optional)
  • 1/4 cup crumbled cheese for garnish (optional)
  • 2 tablespoons sliced green onions (optional)

Instructions

  1. Prepare the ingredients by chopping the onion, mincing the garlic, and measuring the corn kernels.
  2. Heat olive oil in a large pot over medium heat.
  3. Add the chopped onion and cook for about 4–5 minutes until soft and translucent.
  4. Add the minced garlic and cook for another minute while stirring.
  5. Add the corn kernels to the pot and stir well with the onion and garlic.
  6. Sprinkle in the chili powder and paprika, mixing to coat the corn evenly.
  7. Pour in the vegetable broth and bring the mixture to a gentle simmer.
  8. Cook for about 15 minutes so the corn becomes tender and the flavors combine.
  9. Use an immersion blender to blend the soup until smooth, or blend partially if you prefer some texture.
  10. Return the soup to low heat and stir in the cream or coconut milk.
  11. Add lime juice, salt, and black pepper, then simmer for another 3–5 minutes.
  12. Serve hot and garnish with cilantro, green onions, and crumbled cheese if desired.

Notes

  • Fresh sweet corn gives the best flavor, but frozen corn works well too.
  • Blend the soup completely for a smooth texture or partially for a chunky style.
  • If the soup becomes too thick, add extra broth while reheating.
  • Roasting the corn before adding it to the soup can create a deeper flavor.
  • The soup can be stored in the refrigerator for up to 4 days.
  • Freeze leftovers in airtight containers for up to 3 months.
