Ingredients

  • 2 lbs boneless skinless chicken breasts or thighs
  • 1 packet ranch seasoning mix
  • 1 can (10.5 oz) cream of chicken soup
  • 8 oz cream cheese, cubed
  • 1/2 cup chicken broth
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • Salt and black pepper to taste
  • Optional garnish: chopped parsley

Instructions

  1. Place the chicken in the bottom of the crockpot.
  2. Add chopped onion and minced garlic over the chicken.
  3. Sprinkle ranch seasoning evenly on top.
  4. Add cream of chicken soup, chicken broth, and cubed cream cheese.
  5. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours.
  6. Once the chicken is cooked, remove it and shred using two forks.
  7. Return the shredded chicken to the crockpot and mix with the creamy sauce.
  8. Cook for another 10 minutes so the sauce thickens.
  9. Serve warm with rice, pasta, or vegetables.

Notes

  • Chicken thighs stay juicier than chicken breasts during slow cooking.
  • For extra flavor add mushrooms or spinach.
  • If the sauce becomes too thick, add a small amount of broth.
