  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 2 large eggs
  • 1 cup shredded unsweetened coconut
  • 1 cup panko breadcrumbs
  • 1/2 teaspoon paprika
  • Vegetable oil for frying or brushing (if baking)

Instructions

  1. Preheat oven to 425°F if baking, or heat oil in a skillet over medium heat if frying.
  2. Season the flour with salt, pepper, and garlic powder.
  3. Beat the eggs in a separate shallow bowl.
  4. In another bowl, combine shredded coconut, panko breadcrumbs, and paprika.
  5. Coat each chicken tender in flour, then dip into the egg mixture.
  6. Press the chicken firmly into the coconut breadcrumb mixture until fully coated.
  7. Place coated tenders on a baking sheet or plate and let rest for 5 minutes.
  8. Bake for 18–22 minutes, flipping halfway, or fry until golden brown and cooked through.
  9. Transfer to a wire rack or paper towel-lined plate before serving.
