  • 2 lbs boneless skinless chicken breasts
  • 3 bell peppers (red, yellow, or green), sliced
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp oregano
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 2 tbsp lime juice
  • 8 small tortillas for serving

Instructions

  1. Place the chicken breasts in the bottom of the crockpot.
  2. Add sliced bell peppers and onions on top of the chicken.
  3. Sprinkle chili powder, cumin, paprika, garlic powder, oregano, salt, and black pepper over the ingredients.
  4. Add minced garlic, olive oil, and lime juice.
  5. Cover the crockpot and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  6. Once the chicken is tender, remove it from the crockpot and shred it using two forks.
  7. Return the shredded chicken to the slow cooker and mix with the peppers and onions.
  8. Allow the mixture to cook for another 10 minutes so the flavors combine.
  9. Serve the chicken fajita mixture inside warm tortillas.
  10. Add your favorite toppings and enjoy.
