  • 2 medium eggplants (Japanese or globe), halved lengthwise
  • 3 tablespoons white or red miso paste
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • 1 tablespoon maple syrup or honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • Optional: 1 teaspoon sesame seeds
  • Optional: 2 tablespoons chopped green onions
  • Optional: Red chili flakes to taste

Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. Slice eggplants in half lengthwise and score the flesh in a crisscross pattern without cutting through the skin.
  3. Place eggplant halves cut-side up on the baking sheet and lightly brush with oil.
  4. Roast for 15–20 minutes until slightly softened.
  5. In a small bowl, whisk together miso paste, soy sauce, maple syrup, rice vinegar, and sesame oil until smooth.
  6. Remove eggplant from the oven and generously brush the miso glaze over the scored flesh.
  7. Return to oven and roast for another 10–15 minutes until tender and caramelized. Broil for 2–3 minutes at the end for extra browning, watching carefully.
  8. Garnish with sesame seeds, green onions, and chili flakes before serving.
