Ingredients

  • 2 lbs boneless skinless chicken thighs or chicken breasts
  • 1 cup soy sauce
  • 1/2 cup honey
  • 1/4 cup brown sugar
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/2 cup water
  • 2 tablespoons cornstarch
  • 2 tablespoons water (for slurry)
  • Optional: sesame seeds and sliced green onions for garnish

Instructions

  1. Place the chicken into the bottom of the crockpot.
  2. In a bowl combine soy sauce, honey, brown sugar, garlic, ginger, and water.
  3. Whisk the ingredients together until smooth.
  4. Pour the teriyaki sauce mixture over the chicken.
  5. Cover and cook on low for 5 to 6 hours or high for 3 to 4 hours.
  6. Remove the chicken and shred it using two forks.
  7. Return the shredded chicken to the crockpot.
  8. Mix cornstarch with water to create a slurry.
  9. Stir the slurry into the sauce and cook for 10 to 15 minutes until thickened.
  10. Serve warm over rice and garnish with sesame seeds if desired.

Notes

  • Chicken thighs stay more tender during slow cooking than chicken breasts.
  • Add broccoli or bell peppers during the last hour for a complete meal.
  • If the sauce is too sweet, reduce the honey slightly.
  • Leftovers can be stored in the refrigerator for up to 4 days.
  • This recipe can also be frozen for up to 2 months.
