Ingredients

Scale
  • 4 chicken thighs or chicken breasts
  • 1 cup apricot preserves
  • 2 tablespoons soy sauce
  • 1/2 cup chicken broth
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon black pepper
  • 2 cups cooked rice (optional for serving)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chicken pieces and cook until lightly browned on both sides.
  3. Remove the chicken from the pan and set aside.
  4. In the same skillet, sauté the chopped onion until soft and translucent.
  5. Add the minced garlic and cook for about 30 seconds until fragrant.
  6. In a bowl, mix apricot preserves, soy sauce, and chicken broth.
  7. Pour the sauce mixture into the skillet and stir well.
  8. Return the chicken to the pan and coat it evenly with the sauce.
  9. Cover and simmer for 20 to 25 minutes until the chicken is fully cooked and tender.
  10. Serve the chicken with rice and spoon the apricot sauce over the top.

Notes

  • Chicken thighs remain juicier during cooking, but chicken breasts work well too.
  • If the sauce becomes too thick, add a small amount of chicken broth.
  • For extra flavor, garnish with chopped fresh herbs before serving.
  • Serve with steamed rice or roasted vegetables for a complete meal.
  • Leftovers can be stored in an airtight container in the refrigerator.
