Ingredients
Scale
1 cup all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
2 tablespoons white sugar
1/2 teaspoon cinnamon
2 eggs
1/3 cup milk
1 tablespoon melted butter
1 1/4 cups diced fresh peaches (about 2 peaches)
Oil for frying
1 cup powdered sugar (for glaze)
Milk (enough to make drizzling consistency for glaze)
Instructions
In a large bowl, whisk together flour, salt, sugar, cinnamon, and baking powder.
Add eggs, milk, and melted butter to the dry ingredients and whisk until well combined.
Fold in the diced peaches gently.
Heat oil in a deep pan or fryer to 375°F.
Drop 1/4 to 1/2 cup of batter into the hot oil.
Fry each fritter for 2–3 minutes until golden brown, flipping as needed.
Remove and drain on paper towels or wire rack.
While warm, coat with granulated sugar or drizzle with vanilla glaze.
Notes
Use ripe, peeled peaches for the best texture.
Fritters are best served warm and fresh.
Store unglazed fritters in an airtight container at room temperature for 1 day or freeze for up to a month.
Reheat in the oven to maintain crispiness—avoid microwaving.
For glaze, adjust milk quantity to get your desired consistency.
