5 medium zucchini, halved lengthwise
1 1/4 lbs ground beef
1 1/4 cups marinara or tomato sauce
1 1/2 cups shredded mozzarella cheese
1/3 cup grated parmesan cheese
3/4 cup onion, finely chopped
3 cloves garlic, minced
1 1/2 teaspoons Italian seasoning
3/4 teaspoon salt
1/2 teaspoon black pepper
Optional: 3/4 cup diced bell peppers or mushrooms
Instructions
Preheat oven to 375°F (190°C).
Slice zucchini in half lengthwise and scoop out the centers to create boats.
Place zucchini halves in a baking dish.
Heat a skillet over medium heat and cook ground beef with onion and garlic until browned.
Drain excess grease from the skillet.
Add marinara sauce, Italian seasoning, salt, and pepper, and simmer for 5 minutes.
Spoon the beef mixture evenly into each zucchini boat.
Top with mozzarella and parmesan cheese.
Bake for 25–30 minutes until zucchini is tender and cheese is melted and bubbly.
Remove from oven, let cool slightly, and serve.
Notes
Do not overbake to prevent zucchini from becoming mushy.
Use lean ground beef to reduce excess grease.
Pre-bake zucchini for 5–10 minutes if you prefer softer texture.
