Ingredients

Scale
  • 5 ripe nectarines, sliced
  • 2 cups fresh raspberries
  • 1/4 cup maple syrup or honey
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons brown sugar
  • 4 tablespoons cold butter, cubed
  • 1/3 cup milk
  • Vanilla ice cream or whipped cream for serving (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Lightly grease a 9-inch baking dish.
  3. Combine sliced nectarines and raspberries in a large mixing bowl.
  4. Add maple syrup or honey, lemon juice, cornstarch, and vanilla extract.
  5. Gently toss until the fruit is evenly coated.
  6. Transfer the fruit mixture to the prepared baking dish.
  7. In a separate bowl, whisk together flour, baking powder, salt, and brown sugar.
  8. Cut in the cold butter until the mixture resembles coarse crumbs.
  9. Add milk and stir just until a soft dough forms.
  10. Drop spoonfuls of the cobbler topping evenly over the fruit filling.
  11. Leave small gaps between portions of topping to allow steam to escape.
  12. Bake for 35 to 40 minutes or until the topping is golden brown and the fruit is bubbling.
  13. Remove from the oven and allow the cobbler to cool for 10 to 15 minutes.
  14. Serve warm with vanilla ice cream or whipped cream if desired.

Notes

  • Use ripe but firm nectarines for the best texture.
  • Fresh raspberries provide the brightest flavor, but frozen can be substituted.
  • Do not overmix the cobbler topping or it may become tough.
  • Cornstarch helps thicken the fruit juices during baking.
  • The cobbler is best served warm.
  • Add a pinch of cinnamon for extra flavor.
  • Store leftovers covered in the refrigerator for up to 4 days.
  • Reheat individual servings in the microwave before serving.
  • The baked cobbler can be frozen for up to 2 months.
  • Serve with ice cream, whipped cream, or Greek yogurt.
