Ingredients

Scale
  • 3 ripe peaches, sliced
  • 5 cups mixed greens or baby spinach
  • 1/2 cup crumbled feta cheese
  • 1/3 cup sliced almonds or chopped walnuts
  • 1/4 small red onion, thinly sliced
  • 3 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Wash and dry the mixed greens thoroughly, then place them in a large salad bowl.
  2. Rinse the peaches, remove the pits, and slice them into thin wedges.
  3. Add the sliced peaches and red onion to the bowl with the greens.
  4. Sprinkle the crumbled feta cheese and sliced almonds over the salad.
  5. In a small bowl, whisk together olive oil, lemon juice, honey, Dijon mustard, salt, and black pepper.
  6. Drizzle the dressing over the salad just before serving.
  7. Toss gently until all ingredients are lightly coated.
  8. Serve immediately while the greens and peaches are fresh.

Notes

  • Use ripe but firm peaches for the best texture.
  • Add the dressing just before serving to keep the greens crisp.
  • To make it vegan, omit the cheese or replace it with a plant-based alternative.
  • Toast the nuts lightly for extra flavor and crunch.
  • This salad pairs well with grilled vegetables or grain dishes.
