Ingredients

  • 1 cup rolled oats
  • 1/2 cup peanut or almond butter
  • 1/3 cup honey or maple syrup
  • 2 tbsp chia seeds
  • 2 tbsp flaxseed meal
  • 1/4 cup mini chocolate chips
  • 1 tsp vanilla extract
  • Pinch of sea salt (optional)

Instructions

  1. In a medium bowl, combine rolled oats, flaxseed meal, chia seeds, and chocolate chips.
  2. In a separate bowl, whisk together peanut butter, honey (or maple syrup), and vanilla extract until smooth.
  3. Pour the wet mixture into the dry ingredients and mix until fully combined. Adjust texture with more oats if too sticky, or nut butter if too dry.
  4. Chill the mixture in the refrigerator for 15–30 minutes to firm up.
  5. Using a small scoop or spoon, roll the mixture into 1-inch balls.
  6. Place energy balls on a parchment-lined tray and refrigerate for 1 hour to set.
  7. Transfer to an airtight container and store in the fridge for up to 2 weeks or freeze for up to 3 months.
