Ingredients

  • 1 tablespoon butter (for sautéing onion)
  • 1 medium onion, diced
  • 2 lbs frozen diced hash browns
  • 1/2 cup melted butter
  • 2 cans (10.75 oz each) condensed cream of chicken soup
  • 2 cups sour cream
  • Salt, to taste
  • Black pepper, to taste
  • 2 cups freshly grated cheddar cheese
  • 3 cups corn flakes, crushed
  • 2 tablespoons butter (for topping)

Instructions

  1. Preheat oven to 350°F. Grease a 9×13 casserole dish with butter or nonstick spray.
  2. Sauté diced onion in 1 tablespoon butter until translucent in a skillet.
  3. In a large bowl, mix frozen diced hash browns, melted butter, cream of chicken soup, sour cream, cheddar cheese, sautéed onion, salt, and pepper until fully combined.
  4. Spread the potato mixture evenly into the prepared casserole dish.
  5. Melt 2 tablespoons of butter in the skillet and toast the crushed corn flakes for about 1 minute.
  6. Sprinkle the toasted corn flakes over the top of the casserole.
  7. Bake uncovered for 40–45 minutes until hot and bubbly.
  8. Serve immediately while hot.

Notes

  • No need to thaw hash browns before mixing.
  • Substitute cream of chicken soup with mushroom or celery soup for dietary needs.
  • Use different toppings like Ritz crackers or French fried onions.
  • To make ahead, assemble and refrigerate up to 24 hours. Add topping before baking.
  • Freeze for up to 3 months. Thaw overnight in the fridge before baking.
