4 cups mixed greens or romaine lettuce
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1/2 cup red onion, thinly sliced
1 cup bell peppers, chopped
1 lb calamari, cleaned and sliced into rings
2 tablespoons olive oil
2 tablespoons lemon juice
1 clove garlic, minced
2 tablespoons fresh parsley, chopped
Salt and pepper to taste
Instructions
Clean and rinse the calamari, then slice into rings if needed.
Boil lightly salted water and cook calamari for 1–2 minutes.
Transfer calamari to ice water, then drain and set aside.
Wash and dry all vegetables thoroughly.
Chop lettuce, tomatoes, cucumber, onion, and bell peppers evenly.
In a bowl, whisk olive oil, lemon juice, garlic, parsley, salt, and pepper.
Combine vegetables and calamari in a large bowl.
Pour dressing over the salad gradually.
Toss gently until evenly coated.
