  • 2 tablespoons tomato paste
  • 1/2 teaspoon red pepper flakes
  • 3/4 cup chicken or vegetable broth
  • 2 teaspoons paprika
  • 2 handfuls fresh spinach
  • 1/2 cup heavy cream
  • 1 to 2 tablespoons fresh lemon juice
  • 2 tablespoons chopped parsley
  • Cooked rice, pasta, or crusty bread for serving

Instructions

  1. Pat shrimp dry and season with salt and pepper.
  2. Heat 2 tablespoons olive oil in a large skillet over medium-high heat.
  3. Add shrimp in a single layer and cook about 3 minutes. Flip and cook 1 more minute until pink and firm. Remove to a plate.
  4. Reduce heat to medium and add remaining olive oil.
  5. Add shallot and bell pepper. Cook 3 to 4 minutes until softened.
  6. Stir in garlic, tomato paste, and red pepper flakes. Cook 2 minutes until fragrant.
  7. Pour in broth and simmer until reduced by half.
  8. Add paprika and spinach. Cook until spinach wilts.
  9. Stir in heavy cream and lemon juice.
  10. Return shrimp to skillet and warm through for 1 minute.
  11. Garnish with parsley and serve immediately.

  • Do not overcook shrimp or they may become rubbery.
