Instructions

  1. Preheat the grill to medium heat, about 375°F to 400°F.
  2. Wash the potatoes thoroughly and cut them into evenly sized 1-inch pieces so they cook evenly.
  3. Place the potatoes in a large bowl and add olive oil, garlic, salt, pepper, paprika, onion powder, parsley, and thyme.
  4. Add the chopped bell peppers and onions if using, then toss everything together until the potatoes are evenly coated with seasoning.
  5. Tear off large sheets of heavy-duty aluminum foil and place a portion of the seasoned potatoes in the center of each sheet.
  6. Fold the foil over the potatoes and seal the edges tightly to create a packet that traps heat and steam.
  7. Place the foil packets directly on the grill grates.
  8. Cook for 25 to 30 minutes, flipping the packets halfway through cooking to ensure even heat distribution.
  9. Carefully open one packet and test a potato with a fork. The potatoes should be tender and easily pierced.
  10. Remove the packets from the grill, open carefully to release steam, and serve warm.
