  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 medium onion, diced
  • 1 bell pepper, diced
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Optional: lime wedges, sour cream, avocado slices

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add diced onion and bell pepper, sauté for 3-4 minutes until softened.
  3. Add ground turkey and cook, breaking it apart with a spatula until browned and no longer pink.
  4. Stir in taco seasoning and mix well to coat the meat evenly.
  5. Add diced tomatoes, black beans, and corn. Stir to combine and simmer for 5-7 minutes until slightly thickened.
  6. Reduce heat to low and sprinkle shredded cheese evenly on top.
  7. Cover and let the cheese melt for 2-3 minutes until bubbly.
  8. Remove from heat, garnish with cilantro, and serve with lime wedges or desired toppings.
