  • 2 cups mayonnaise
  • 1/2 cup whole milk
  • 1 tablespoon apple cider vinegar

  • 1/2 teaspoon black pepper
  • 1 teaspoon sugar (optional)

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add macaroni and cook 1 to 2 minutes longer than package directions for softer texture.
  3. Drain well and transfer to a bowl.
  4. Toss warm macaroni with apple cider vinegar.
  5. Cool for 10 minutes.
  6. In a large bowl whisk together mayonnaise, milk, salt, pepper, and sugar.
  7. Stir in grated carrots and grated onion.
  8. Add macaroni and mix until fully coated.
  9. Cover and refrigerate at least 2 hours or overnight.
  10. Stir before serving and add a splash of milk if needed.
