Ingredients

  • 2 ½ cups old-fashioned oats (divided)
  • ½ cup unsweetened shredded coconut
  • ⅓ cup coconut flour (or almond flour for variation)
  • ¼ teaspoon sea salt
  • ⅓ cup melted coconut oil
  • ½ cup agave syrup (or substitute with maple syrup, honey, or brown rice syrup)
  • ½ cup dairy-free chocolate chips (mini chips preferred)

Instructions

  1. In a food processor, grind ½ cup of oats into a fine flour.
  2. In a stand mixer or large bowl, combine ground oats, remaining 2 cups whole oats, shredded coconut, coconut flour, and sea salt.
  3. Melt coconut oil and add to the oat mixture along with agave syrup. Mix until a thick, sticky dough forms.
  4. Stir in chocolate chips by hand.
  5. Line a 9×5 inch loaf pan with parchment paper and press the dough firmly and evenly into the pan.
  6. Freeze for at least 2 hours until firm.
  7. Remove from the pan using parchment paper and cut into 18 squares.

Notes

  • You can roll the mixture into balls instead of squares.
  • Substitute almond flour for coconut flour if desired (note: will no longer be nut-free).
  • You can use brown rice syrup, pure honey, or maple syrup instead of agave syrup.
  • For dairy-free and vegan, use dairy-free chocolate chips.
