  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 12 tablespoons chili paste (sambal oelek or gochujang)
  • 6 cups chicken or vegetable broth
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil (for finishing)
  • 1215 frozen dumplings or potstickers (chicken,shrimp, or vegetable)
  • 1 cup mushrooms, sliced
  • 1 cup bok choy or spinach
  • 2 green onions, sliced (for garnish)
  • Chili oil or sriracha (optional, for serving)

Instructions

  1. Turn the Instant Pot to Sauté mode and add sesame oil. Once hot, sauté garlic, ginger, and chili paste for 1–2 minutes until fragrant.
  2. Add broth, soy sauce, mushrooms, and bok choy. Stir to combine, scraping any bits off the bottom to prevent burning.
  3. Add frozen dumplings to the pot. Do not stir too much—just make sure they’re mostly submerged in the broth.
  4. Seal the lid and set to Pressure Cook (Manual) on High for 3 minutes. Allow a 5-minute natural release, then quick release the rest of the steam.
  5. Switch back to Sauté mode and stir in rice vinegar and an extra drizzle of sesame oil. Adjust seasoning with soy sauce or chili paste as needed.
  6. Ladle soup into bowls and top with green onions, sesame seeds, and chili oil for an extra kick. Serve hot and enjoy!

  • Use high-quality dumplings for best texture and flavor.
  • Don’t overcook the dumplings—3 minutes on high pressure is perfect.
