Ingredients

  • 1 pound ground beef (90% lean)
  • 1 teaspoon minced garlic
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon dried parsley
  • 1 egg
  • 1/3 cup grated parmesan cheese
  • 1/3 cup Italian breadcrumbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 teaspoons olive oil
  • 1/2 cup onion, finely diced
  • 2 stalks celery, sliced
  • 2 carrots, peeled and diced
  • 1 (15 oz) can crushed tomatoes
  • 1 (16 oz) can tomato sauce
  • 6 cups beef broth
  • 1 teaspoon dried Italian seasoning (for soup)
  • Salt and pepper to taste
  • 3/4 cup dry short pasta (like ditalini)
  • 2 tablespoons fresh parsley, chopped
  • Grated parmesan cheese for serving (optional)

Instructions

  1. Preheat the broiler and coat a baking sheet with cooking spray.
  2. In a large bowl, combine ground beef, garlic, Italian seasoning, parsley, egg, parmesan, breadcrumbs, salt, and pepper. Mix well.
  3. Shape into 1/2 to 3/4 inch meatballs and place on the baking sheet. Spray the tops with cooking spray.
  4. Broil for 8–10 minutes until browned.
  5. In a large pot, heat olive oil over medium heat. Add onion, celery, and carrots. Sauté for 4–5 minutes.
  6. Add crushed tomatoes, tomato sauce, beef broth, Italian seasoning, salt, and pepper. Bring to a simmer.
  7. Add the broiled meatballs and pasta to the pot. Simmer for about 10 minutes or until pasta is tender.
  8. Garnish with fresh parsley and parmesan cheese if desired. Serve hot.

Notes

  • Use pre-cooked or broiled meatballs to prevent them from falling apart.
  • Pasta will absorb broth over time; add extra broth when reheating.
  • Can be made with turkey or chicken for a lighter version.
  • Freeze without pasta for better texture upon reheating.
