  • 2 cups water
  • 1 cup light corn syrup
  • 1/4 teaspoon salt
  • 2 large egg whites
  • 1 (3-ounce) packet Jell-O, any flavor
  • 1 teaspoon pure vanilla extract

Instructions

  1. Line a large baking sheet with parchment paper and set aside.
  2. In a heavy-bottomed saucepan over medium heat, combine sugar, water, corn syrup, and salt. Bring to a boil and stir until sugar dissolves.
  3. Insert a candy thermometer and cook the syrup without stirring until it reaches 260°F (hard-ball stage), about 10 minutes.
  4. While the syrup is cooking, beat egg whites in a stand mixer with the whisk attachment until stiff peaks form.
  5. Slowly add the Jell-O powder to the whipped egg whites, gently folding to avoid deflating them.
  6. Once the syrup reaches 260°F, slowly pour it into the egg white mixture while beating on low speed.
  7. After all the syrup is added, increase speed to medium-high and beat until the candy loses its gloss and holds its shape, about 5 minutes.
  8. Add vanilla extract and mix to combine.
  9. Quickly scoop the mixture onto the parchment-lined baking sheet using greased spoons or an ice cream scoop.
  10. Let candies set uncovered at room temperature for 2–12 hours, depending on humidity, until firm.

  • Make on a cool, dry day to prevent sticky or unset candy.
