Ingredients
Scale
12 oz rotini or penne pasta
2 cups grilled chicken breast, diced
1 1/2 cups cherry tomatoes, halved
1 cup small mozzarella cheese cubes
1/4 cup fresh basil, chopped
1/4 cup fresh parsley, chopped
3 tablespoons olive oil
2 tablespoons lemon juice
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon black pepper
Instructions
Cook the pasta according to the package instructions until al dente.
Drain the pasta and rinse under cold water to stop the cooking process.
Allow the pasta to cool completely before assembling the salad.
Season chicken lightly with salt and pepper, then grill until fully cooked.
Let the chicken rest for a few minutes, then cut it into bite-sized pieces.
In a small bowl, whisk together olive oil, lemon juice, garlic powder, salt, and black pepper to create the dressing.
In a large bowl or serving dish, add a layer of pasta.
Add layers of grilled chicken, cherry tomatoes, mozzarella cheese, and fresh herbs.
Repeat the layers until all ingredients are used.
Drizzle the dressing over the top and refrigerate for 30–60 minutes before serving.
Gently toss the salad before serving to distribute the flavors.
Notes
Allow pasta to cool completely before layering to prevent the dressing from being absorbed too quickly.
Fresh basil gives the salad its classic Caprese flavor.
Add cucumbers or bell peppers for extra crunch.
If the salad becomes dry after chilling, add a small amount of olive oil or dressing.
Store leftovers in an airtight container in the refrigerator.
