3/4 cup unsalted butter, melted
1/3 cup sugar
1/4 tsp salt
1 1/2 cups sugar (for filling)
1/4 cup all-purpose flour
4 large eggs
2/3 cup fresh lemon juice
Zest of 1–2 lemons
1–1 1/2 cups blueberries (fresh or frozen)
Optional: powdered sugar for dusting
Instructions
Preheat oven to 350°F (175°C) and line a baking pan with parchment paper.
Mix flour, sugar, melted butter, and salt for the crust.
Press mixture into pan and bake for 15–20 minutes until lightly golden.
Whisk together sugar, flour, eggs, lemon juice, and zest for filling.
Fold in blueberries gently.
Pour filling over warm crust and bake for 25–30 minutes.
Cool completely, then refrigerate for 2–3 hours.
Slice into bars, dust with powdered sugar, and serve.
