  • 3/4 cup orzo pasta
  • 2 cups fresh spinach, chopped
  • 1/4 cup fresh lemon juice
  • 1 teaspoon lemon zest (optional)

  • 2 tablespoons fresh parsley, chopped (optional for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion, carrots, and celery, and cook for about 5 minutes until softened.
  3. Stir in minced garlic and cook for about 30 seconds until fragrant.
  4. Pour in the chicken broth and bring the mixture to a gentle simmer.
  5. Add the chicken to the pot and cook for about 15 minutes until fully cooked.
  6. Remove the chicken, shred it using two forks, and return it to the soup.
  7. Add the orzo pasta and cook for about 8–10 minutes until tender.
  8. Stir in the chopped spinach and cook for another 2 minutes until wilted.
  9. Add fresh lemon juice and lemon zest, then stir well.
  10. Taste the soup and adjust seasoning with salt and pepper.
  11. Serve warm and garnish with chopped parsley if desired.
