  • 1 cup cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced

  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley or dill, chopped

Instructions

  1. Steam the lobster tails for about 7–9 minutes until the shells turn bright red and the meat becomes opaque.
  2. Allow the lobster to cool slightly, then remove the meat from the shells and cut it into bite-sized pieces.
  3. Wash and dry the lettuce or mixed greens thoroughly.
  4. Slice the cucumber, halve the cherry tomatoes, and dice the avocado.
  5. Place the lettuce, cucumber, tomatoes, and avocado in a large salad bowl.
  6. Add the chopped lobster meat to the bowl.
  7. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and black pepper to make the dressing.
  8. Drizzle the dressing over the salad.
  9. Gently toss the salad to combine all ingredients without breaking the lobster pieces.
  10. Transfer the salad to serving plates and garnish with fresh parsley or dill.
  11. Serve immediately with lemon wedges on the side.
