Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix graham cracker crumbs, coconut, melted butter, and sugar.
  3. Press into a tart pan.
  4. Bake for 10 minutes until golden.
  5. Cool completely.
  6. Whisk mango puree, sugar, eggs, egg yolks, and lime juice.
  7. Cook over medium heat while whisking constantly.
  8. Cook until thickened.
  9. Remove from heat and stir in butter.
  10. Strain through a fine mesh sieve.
  11. Pour into cooled crust.
  12. Chill for at least 4 hours.
  13. Garnish with mango slices and toasted coconut.
