Ingredients

  • 1 cup crushed graham crackers or biscuits
  • 3 tbsp melted butter
  • 2 tbsp sugar (optional)
  • 12 oz cream cheese (softened)
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup blueberries (fresh or frozen)
  • 1/4 cup sugar (for topping)
  • 1 tbsp lemon juice
  • 1 tsp cornstarch + 1 tbsp water

Instructions

  1. Preheat oven to 325°F (160°C) and line a muffin tin with paper liners.
  2. Mix crushed biscuits with melted butter and sugar, then press into the bottom of each liner.
  3. Beat cream cheese until smooth, then add sugar, eggs, and vanilla extract. Mix until combined.
  4. Pour the filling over the crust in each liner.
  5. Bake for 15–18 minutes until centers are slightly set.
  6. Let cheesecakes cool completely, then refrigerate for at least 2–3 hours.
  7. In a saucepan, cook blueberries with sugar and lemon juice until soft.
  8. Add cornstarch mixture and cook until thickened, then cool.
  9. Spoon blueberry topping over each cheesecake before serving.
