2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
2 large eggs
3/4 cup granulated sugar
1/2 cup vegetable oil
1 teaspoon vanilla extract
1/2 cup milk
2 cups diced fresh nectarines
Coarse sugar or streusel topping (optional)
Instructions
Preheat oven to 375°F (190°C).
Line a muffin tin with paper liners.
In a bowl, whisk together flour, baking powder, salt, and cinnamon.
In another bowl, whisk eggs, sugar, oil, vanilla, and milk.
Add wet ingredients to dry ingredients and stir until just combined.
Gently fold in the diced nectarines.
Divide batter evenly among muffin cups.
Sprinkle with coarse sugar or streusel if desired.
Bake for 18-22 minutes until golden and a toothpick comes out clean.
Cool in the pan for 5 minutes.
Transfer to a wire rack to cool completely.
Serve and enjoy.
Notes
Use ripe but firm nectarines for best results.
Do not overmix the batter.
Frozen nectarines may be used if thawed and drained.
