Instructions

  1. Preheat oven to 375°F (190°C).
  2. Line a muffin tin with paper liners.
  3. In a bowl, whisk together flour, baking powder, salt, and cinnamon.
  4. In another bowl, whisk eggs, sugar, oil, vanilla, and milk.
  5. Add wet ingredients to dry ingredients and stir until just combined.
  6. Gently fold in the diced nectarines.
  7. Divide batter evenly among muffin cups.
  8. Sprinkle with coarse sugar or streusel if desired.
  9. Bake for 18-22 minutes until golden and a toothpick comes out clean.
  10. Cool in the pan for 5 minutes.
  11. Transfer to a wire rack to cool completely.
