  • 2 cups blueberries (fresh or frozen)
  • 1/3 cup sugar (for topping)
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch + 2 tbsp water

Instructions

  1. In a bowl, mix crushed biscuits with melted butter and sugar until combined.
  2. Press the mixture firmly into the bottom of a pan to form the crust. Chill in the refrigerator for 20–30 minutes.
  3. Beat softened cream cheese until smooth, then add sugar and vanilla extract and mix well.
  4. Whip the heavy cream separately until stiff peaks form, then gently fold it into the cream cheese mixture.
  5. Spread the filling evenly over the chilled crust.
  6. In a saucepan, cook blueberries with sugar and lemon juice over medium heat until soft.
  7. Add cornstarch mixture and stir until the topping thickens. Let it cool completely.
  8. Pour the cooled blueberry topping over the cheesecake layer.
  9. Refrigerate for at least 4–6 hours or overnight until fully set.
  10. Slice and serve chilled.
