Ingredients

  • 1 1/2 Tbsp olive oil, divided
  • 1 lb boneless skinless chicken breasts, cut into 1-inch pieces
  • 1 1/2 Tbsp Cajun seasoning
  • 1 medium red bell pepper, sliced into 2-inch strips
  • 1 medium yellow bell pepper, sliced into 2-inch strips
  • 1 small red onion, halved and thinly sliced
  • 2 garlic cloves, minced (2 tsp)
  • 2 (14.5 oz) cans low-sodium chicken broth
  • 1 (14.5 oz) can fire roasted diced tomatoes
  • 3/4 cup heavy cream, divided
  • 12 oz penne pasta
  • 2 tsp cornstarch mixed with 1 Tbsp water
  • 3/4 cup finely shredded Parmesan cheese
  • 3 Tbsp minced fresh parsley
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Heat 1 Tbsp olive oil in a large pot over medium-high heat.
  2. Toss chicken with 1/2 Tbsp Cajun seasoning. Add to pot in a single layer.
  3. Cook chicken until browned and fully cooked, about 6 minutes. Transfer to foil and keep warm.
  4. Add remaining 1/2 Tbsp olive oil to the same pot. Add bell peppers and onion; sauté for 3 minutes.
  5. Add garlic and remaining 1 Tbsp Cajun seasoning. Sauté 1 more minute.
  6. Pour in chicken broth, diced tomatoes, and 1/2 cup of the heavy cream. Bring to a boil.
  7. Add pasta and cook, stirring frequently, until nearly tender (about 12–13 minutes).
  8. Stir in cornstarch-water mixture and cook for 1 more minute to thicken the sauce.
  9. Remove from heat and stir in remaining 1/4 cup cream, Parmesan, parsley, and cooked chicken.
  10. Season with salt and pepper to taste. Serve warm.

Notes

  • Don’t overcook the chicken—165°F is the ideal temperature.
  • Use penne for best texture, but other pasta shapes can be substituted.
  • Add more cream or cream cheese to mellow the spice level.
  • Dish can be stored in the fridge for up to 4 days.
  • Shrimp or andouille sausage can replace chicken for variation.
