Ingredients

Scale
  • 1 ½ cups graham cracker crumbs
  • 57 tablespoons butter, melted
  • 1 cup heavy whipping cream
  • ½ cup light brown sugar
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • ½ cup freshly squeezed orange juice (from about 2 Cara Cara oranges)
  • 1 teaspoon fine orange zest (from 1 Cara Cara orange)

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×9-inch pan with parchment paper.
  2. Combine graham cracker crumbs with melted butter until the texture resembles wet sand. Press evenly into the prepared pan to form the crust.
  3. Bake the crust for 10 minutes until lightly golden and fragrant. Allow it to cool completely.
  4. In a mixing bowl, whip the heavy cream with brown sugar until medium peaks form. Chill until ready to use.
  5. In another bowl, beat the softened cream cheese until smooth. Add the orange juice, zest, and vanilla extract, and mix until fully combined.
  6. Gently fold the whipped cream mixture into the cream cheese mixture until well incorporated and airy.
  7. Spread the filling evenly over the cooled crust. Cover with plastic wrap and freeze for 3–4 hours or until firm.
  8. Before serving, let the bars sit at room temperature for 5–10 minutes, then slice into 16 squares. Garnish with orange zest or slices if desired.

Notes

  • Use room-temperature cream cheese for a smooth filling.
  • Fresh orange juice provides better flavor than bottled juice.
  • For a twist, try lemon, lime, or chocolate variations.
  • Store in the refrigerator for up to 4 days or freeze for up to 3 months.
  • Allow to soften slightly before serving for the best texture.
