Instructions

  1. Cook pasta according to package directions until al dente.
  2. Drain and rinse lightly under cool water.
  3. Allow pasta to cool completely.
  4. Cook corn briefly if using fresh corn and allow it to cool.
  5. Slice peaches and halve cherry tomatoes.
  6. Chop fresh basil.
  7. Whisk together olive oil, lemon juice, honey, salt, and pepper.
  8. Place cooled pasta into a large serving bowl.
  9. Add peaches, corn, tomatoes, basil, and arugula.
  10. Pour dressing over the salad.
  11. Toss gently until evenly coated.
