Ingredients

  • 1 pound ribeye or sirloin steak, thinly sliced
  • 1 tablespoon olive oil
  • 1 small onion, thinly sliced
  • 1 bell pepper, thinly sliced
  • 1 cup mushrooms, sliced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 cup shredded provolone or mozzarella cheese
  • 4 large flour tortillas
  • 1 tablespoon butter or oil for grilling

Instructions

  1. Place the steak in the freezer for about 15 minutes to make slicing easier.
  2. Slice the steak thinly against the grain and season with salt, black pepper, and garlic powder.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Add the sliced onions, bell peppers, and mushrooms and cook for about 4–5 minutes until softened.
  5. Move the vegetables to one side of the skillet and add the sliced steak.
  6. Cook the steak for 3–4 minutes, stirring occasionally until browned.
  7. Mix the steak with the vegetables and sprinkle cheese over the mixture so it begins to melt.
  8. Spoon a portion of the steak and vegetable mixture into the center of each tortilla.
  9. Fold the sides of the tortilla inward and roll tightly to form a wrap.
  10. Heat a skillet or grill pan over medium heat and lightly butter the surface.
  11. Place the wraps seam-side down and cook for 2–3 minutes per side until golden and crispy.
  12. Remove from heat, slice in half if desired, and serve warm.

  • Slice the steak thinly against the grain to keep it tender.
  • Do not overfill the tortillas to prevent the wraps from opening during grilling.
  • Cook the wraps seam-side down first to help seal them.
  • Serve immediately for the best crispy texture.
