  • Total Time: 4 hours 20 minutes
  • Yield: 12

Ingredients

For the Crust:
2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
1/4 cup sugar
For the Filling:
1 (8 oz) package cream cheese, softened
1/2 cup powdered sugar
1 (20 oz) can crushed pineapple, drained
1 (8 oz) container whipped topping, thawed
For the Topping:
Additional whipped topping, for garnish
Pineapple chunks or slices, for garnish
Maraschino cherries, for garnish

Instructions

Prepare the Crust:
In a medium bowl, mix together graham cracker crumbs, melted butter, and sugar until well combined. Press the mixture into the bottom of a 9×13 inch baking dish. Chill in the refrigerator for 15 minutes to set.
Make the Filling:
In a large bowl, beat the cream cheese and powdered sugar together until smooth. Fold in the drained crushed pineapple and whipped topping until well blended. Spread the filling evenly over the chilled crust.
Chill and Garnish:
Cover and chill the dessert in the refrigerator for at least 4 hours, or overnight for best results. Before serving, garnish with additional whipped topping, pineapple chunks or slices, and maraschino cherries.

Notes

  • Crust Variations: While graham cracker crumbs are traditional, feel free to experiment with crushed vanilla wafers, shortbread cookies, or even coconut flakes for a tropical twist.
  • Pineapple Perfection: Ensure your crushed pineapple is thoroughly drained to prevent the crust from becoming soggy. For an extra burst of flavor, mix a teaspoon of lemon zest into the pineapple layer.
  • Whipped Wonders: Opt for heavy cream whipped into stiff peaks for a richer, more luxurious texture. However, store-bought whipped topping is a fantastic time-saver and works wonderfully too.
  • Cheese Choices: Full-fat cream cheese provides the silkiest texture, but for those watching their calorie intake, low-fat or even non-dairy alternatives can be used effectively.
  • Chill Factor: Patience is key! A fully chilled dessert sets perfectly, making it easier to slice and serving up those neat, picturesque pieces that’ll have everyone reaching for seconds.
