  • 1½ tsp water (for icing)

Instructions

  1. Preheat oven to 425°F.
  2. In a large bowl, whisk together melted butter, cane sugar, vanilla, sour cream, pumpkin puree, and eggs until smooth.
  3. In a separate bowl, whisk together flour, baking soda, baking powder, pumpkin pie spice, cinnamon, and salt.
  4. Fold dry ingredients into the wet ingredients until just combined. Do not overmix.
  5. In a small bowl, mix streusel ingredients: flour, brown sugar, and cinnamon. Cut in cold butter until crumbly.
  6. Line muffin tin with paper liners. Fill each about ¾ full with batter using a scoop.
  7. Top each muffin with streusel and press gently so it adheres.
  8. Bake at 425°F for 5 minutes, then reduce temperature to 375°F and bake for 15–20 more minutes until a toothpick comes out clean.
  9. Let muffins cool slightly.
  10. In a small bowl, whisk icing ingredients: powdered sugar, vanilla, and water.
  11. Drizzle icing over cooled muffins before serving.
