  • 4 large eggs
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • 2 tablespoons brown sugar
  • 2/3 cup pumpkin puree (not pumpkin pie filling)
  • 8 slices thick white bread (Texas toast or sliced brioche preferred)
  • Syrup, powdered sugar, or cinnamon-sugar, for serving

Instructions

  1. Preheat a skillet or griddle to medium heat.
  2. In a medium bowl, whisk together eggs, milk, vanilla, cinnamon, pumpkin pie spice, brown sugar, and pumpkin puree.
  3. Melt 1 tablespoon of butter on the preheated skillet or griddle and spread it evenly across the surface.
  4. Dredge a slice of bread in the pumpkin mixture, coating all sides.
  5. Place the soaked bread onto the skillet. Repeat with more slices depending on space available.
  6. Cook each side for 2–3 minutes until golden brown.
  7. Transfer cooked slices to a plate and cover to keep warm. Repeat with remaining bread and pumpkin mixture, adding more butter as needed.
  8. Serve warm with syrup, powdered sugar, or cinnamon-sugar as desired.

Notes

  • Makes about 8 slices of French toast.
  • For best results, use thick-cut brioche or Texas toast.
  • Do not use pumpkin pie filling—use pure pumpkin puree.
  • Use parchment paper between slices when storing to avoid sticking.
  • For extra flavor, add a dash of nutmeg or maple extract to the custard.
