  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon chia seeds
  • 1 tablespoon ground flaxseed

Instructions

  1. Mix the oats, protein powder, pumpkin pie spice, cinnamon, chia seeds, flaxseed, and salt in a large bowl.
  2. Add the pumpkin puree, almond butter, maple syrup, and vanilla extract.
  3. Stir until a thick dough forms, adjusting with extra oats or pumpkin puree if needed.
  4. Fold in any optional mix-ins.
  5. Refrigerate the mixture for 15 minutes.
  6. Roll into 1-inch balls using a cookie scoop or tablespoon.
  7. Place on a parchment-lined tray and chill for another 20 to 30 minutes before serving.
