Scale
  • 4 boneless skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1/2 cup low-sodium chicken broth
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 cup Parmesan cheese, grated
  • 1/4 cup fresh basil, chopped

Instructions

  1. Pat chicken breasts dry with paper towels and lightly coat each piece in flour.
  2. Place chicken in the crock pot and season with salt and pepper.
  3. Add garlic, tomato paste, chicken broth, heavy cream, sun-dried tomatoes, oregano, red pepper flakes, and Parmesan cheese.
  4. Stir gently around the chicken to combine ingredients.
  5. Cover and cook on LOW for 6 to 7 hours or HIGH for 3 to 4 hours.
  6. Remove cooked chicken and shred with two forks or slice into pieces.
  7. Return chicken to the slow cooker and stir into the creamy sauce.
  8. Add fresh basil, let rest 5 minutes, then serve warm.

Notes

  • Fresh Parmesan melts smoother than pre-shredded cheese.
  • Use low-sodium broth to avoid excess salt.
  • Chicken thighs can replace breasts for juicier results.
  • Add spinach or mushrooms during the last 30 minutes.
  • Store leftovers refrigerated up to 3 days.
  • Freeze portions up to 2 months.
  • Add broth or cream while reheating if sauce thickens.
