Ingredients

  • 269 grams (about 35) individually wrapped soft caramels
  • 1/2 cup creamy peanut butter
  • 2 tablespoons heavy cream
  • 1/2 teaspoon sea salt
  • 1 cup whole roasted lightly salted peanuts

Instructions

  1. Line a baking sheet with wax paper and set aside.
  2. In a heavy-bottomed saucepan over low heat, combine the caramels, peanut butter, heavy cream, and sea salt.
  3. Stir continuously until the mixture is completely melted and smooth.
  4. Remove from heat and stir in the peanuts until evenly coated.
  5. Quickly drop spoonfuls (1 tablespoon each) onto the prepared baking sheet to form clusters.
  6. Gently shape if needed, being careful as the mixture is hot.
  7. Refrigerate the clusters for at least 20 minutes to set.
  8. Store in an airtight container in the fridge and remove 10 minutes before serving for best texture.

Notes

  • Use only soft caramels for best texture—avoid hard or brittle types.
  • Natural peanut butter is not recommended as it may separate during melting.
  • To prevent clusters from sticking, use wax paper between layers when storing.
  • You can freeze the clusters for up to 3 months—thaw at room temperature before serving.
  • Customize with chocolate drizzle, spicy additions, or other nut variations.
