Ingredients

  • pounds medium zucchini (about 2 medium), sliced into ½-inch rounds
  • 1 tablespoon butter
  • 1 tablespoon minced garlic (about 3 cloves)
  • 1 scallion, thinly sliced (optional)
  • 1 teaspoon fresh lemon juice (optional but recommended)
  • ¼ cup fresh grated Parmesan cheese (optional)
  • Salt and fresh ground black pepper to taste

Instructions

  1. Cut zucchini into ½-inch thick rounds.
  2. Heat a wide skillet over medium-high heat.
  3. Add zucchini slices in a single layer to the hot skillet.
  4. Cook for 1-2 minutes without stirring, allowing bottom to develop golden-brown color.
  5. Push zucchini to sides of pan, add butter to center and let melt, then add garlic to butter and sauté until fragrant.
  6. Toss everything together and cook for another 2-3 minutes until zucchini is tender.
  7. Turn off heat and season with salt, pepper, lemon juice, scallions, and Parmesan if using. Serve immediately.

Notes

  • Use a wide skillet to prevent steaming and ensure proper browning.
  • Don’t overcrowd the pan – cook in batches if necessary.
  • Resist stirring too frequently to allow proper browning.
  • Add salt at the end to prevent drawing out moisture.
  • Best served immediately while hot and crispy.
