Ingredients

  • 2 tablespoons olive oil
  • 2 pounds stewing beef, cubed (such as chuck roast)
  • 3 tablespoons curry powder
  • 1 teaspoon salt, plus more for seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 onion, diced
  • 6 cloves garlic, minced
  • 1-inch ginger root, peeled and minced
  • 1 can (14 ounces) diced tomatoes
  • 2 tablespoons tomato paste
  • 1 can (14 ounces) coconut milk
  • Fresh cilantro, to serve

Instructions

  1. Place the cubed beef on a cutting board and season it generously with salt.
  2. In a large skillet, heat the olive oil over medium-high heat. Sear the beef in batches for 1–2 minutes per side until browned.
  3. Transfer the seared beef to the slow cooker.
  4. Add curry powder, red pepper flakes, diced onion, minced garlic, and minced ginger to the slow cooker. Stir to coat the beef evenly with spices.
  5. Add diced tomatoes, tomato paste, and coconut milk. Stir to combine all ingredients.
  6. Cover and cook on high for 5–6 hours or low for 8–10 hours until beef is tender.
  7. Stir well, adjust seasoning if needed, and serve hot with rice, naan, or potatoes.

Notes

  • Use curry paste instead of powder by substituting 3 tablespoons of paste.
  • Swap fresh aromatics with 1 tsp each of onion powder, garlic powder, and ground ginger for convenience.
  • To thicken curry, remove the lid during the last 30 minutes or stir in a bit of tomato paste or mashed potato.
  • Freezes well for up to 3 months in airtight containers.
  • Add fresh spinach to the curry before serving for extra vegetables.
