Ingredients

  • 1 lb ground beef (85/15)
  • 2 cans kidney beans, drained and rinsed
  • 2 cans diced tomatoes (14.5 oz each)
  • 2 tbsp tomato paste
  • 1 medium yellow onion, chopped
  • 3 garlic cloves, minced
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt and black pepper to taste

Instructions

  1. In a skillet over medium heat, brown the ground beef until no longer pink. Drain excess fat.
  2. Add chopped onion and minced garlic to the skillet. Sauté for 2–3 minutes until fragrant.
  3. Transfer the beef, onion, and garlic to the slow cooker.
  4. Add kidney beans, diced tomatoes, tomato paste, and all spices to the slow cooker.
  5. Stir everything to combine well.
  6. Cover and cook on low for 6–8 hours or high for 3–4 hours.
  7. Stir occasionally, and adjust seasoning before serving.
  8. Top with your favorite toppings like cheese, sour cream, or avocado and serve warm.
